Gaia Saint-Tropez: A Summer with a Mediterranean Flair

From Saint-Amour Saint-Tropez to Gaia Saint-Tropez: A New Horizon
Throughout the seasons, the Saint-Amour has been a constant companion to the days and evenings at La Tartane, from sun-drenched lunches to pan-Asian dinners created by Maître Koy.
This summer, the hamlet looked further afield, toward the shores of the Aegean Sea.
Gaia Saint-Tropez has opened in the hotel’s open-air restaurant, located between the pool and the citrus garden. It’s a spot designed to offer a Mediterranean escape, where the charm of Saint-Tropez meets the spirit of the Greek islands.

Gaia Saint-Tropez: A Certain Vision of the Mediterranean
Gaia Saint-Tropez celebrates contemporary Greek cuisine that is vibrant and generous, where the ingredients always take center stage.
A cuisine guided by the seasons, freshness, and the perfect balance of flavors. The dishes focus on the essentials, with the natural elegance characteristic of the finest Mediterranean restaurants: bold flavors, precise execution, and a deep sense of sharing.
At La Tartane, this spirit has found a setting that feels almost predestined. Between the citrus garden, the pool, and the balmy Saint-Tropez evenings, Gaia Saint-Tropez has crafted an experience that is both refined and spontaneous, designed for large gatherings, leisurely lunches, and dinners under the stars.
More than just a place, Gaia Saint-Tropez embodies a certain vision of the Mediterranean: sunny, vibrant, elegant, and generous.
The Flavors of a Greek Summer
Dinner often begins with a few alifes, those iconic Greek appetizers: taramosalata made with smoked cod roe and lemon, and melitzanosalata made with smoked eggplant and tahini.
Next come the main courses, full of freshness and precision: sea bream carpaccio with mandarin orange and black truffle, delicately smoked tuna, and yellowtail enhanced with dashi. To round out the experience, a few grains of Oscietra or Beluga caviar are sometimes added to the plate.
In the charcoal oven, the flavors become richer: Wagyu 5+ entrecôte, T-bone steak aged for thirty-six days, grilled lamb chops.
And for large gatherings, dishes designed to be shared take center stage on the table: linguine with carabineros, and king crab legs served with orzo.

By the pool, time stands still
Just a few steps from the restaurant, the Pool Bar extends the Gaia Saint-Tropez experience throughout the day.
Signature cocktails, inspired by Mediterranean landscapes, scents, and the art of living, are the perfect accompaniment to the most relaxing moments. A few mezze, some bluefin tuna sashimi, a truffle-infused tuna carpaccio, or a chicken souvlaki are all it takes to bring a touch of the Cyclades to the poolside.
A late lunch, a drink in the shade, a few laps in the pool between courses: here, time naturally takes on a different rhythm.
A summer we'll never forget
The evenings are getting milder, the tables are gradually being put away, and the garden is returning to its peaceful state.
That summer in Greece will long be associated with La Tartane: dinners under the stars, the scent of citrus, and large, shared meals.
Thank you for joining us for this first season of Gaia Saint-Tropez.
The rest of the story will be written soon.
